Pancakes and Poached Eggs

We kick off our Food Mob series in style with a delicious white chocolate and blueberry pancake recipe that will knock the socks off your significant other.

White Chocolate and Blueberry Pancakes
Here's a recipe that will knock the socks off any visitor to your place. So easy to whip up, and yet so tasty. These pancakes have a moist blueberry burst mixed with the sweetness of melted white chocolate. Enough to make anyone's mouth water!
- 2 Eggs
- 2 Cups Flour
- 1 Cup milk
- 1 tsp Baking powder
- 1/2 Cup blueberries
- 6 squares white chocolate
- 1 tsp oil
1. Mix the eggs, milk and flour together until smooth. If the mixture feels a little thick add more milk and if it is too runny add another little flour. (The size of the eggs will vary so the recipe will be slightly different each time).
2. Whisk in the baking powder
3. Heat a large frying pan or skillet to a medium temperature before adding the oil.
4. Using a ladel or large spoon cook three pancakes at a time.
5. Add a couple of blueberries and some chocolate pieces to the top of the pancakes.
6. Flip the pancakes when golden brown and cook for a further 30 seconds on the other side.
7. Serve garnished with strawberries

Poached Egg
- 2 Eggs
- 1tsp White wine vinegar
- Pinch salt
1. Gently bring the water to the boil
2. When the water comes to a boil turn it down slightly and allow to simmer
3. Swirl the water around so and drop the egg in to the center of the water
4. gently poach for about 90 seconds.
5. Remove the egg from the water with a slotted spoon and serve.
