We've gone all Tex Mex again, and this week we tackle the always popular Chili Con Carne recipe. Mid life crisis
We've seen some amazing pics and comments coming in about our fajitas recipe from a few weeks back, so we decided to try cooking another Tex Mex favorite this week: Chili Con Carne. This one's going to blow your friend's heads off :-)
Chili Con Carne
150g Rice
1 Pint/450ml Water
1 lb Ground beef
2 tsp chili powder
1 tsp Cajun seasoning
1 Onion
1 Chicken stock cube
2 Cloves garlic
1 Large sprig of thyme
1 in chopped tomatoes
1 Tin Red kidney beans
3 tsp Ketchup
Sour Cream
Grated Cheddar cheese
1. Sweat off the chopped garlic, onions and thyme over a low heat.
2. Wash the starch off the pic and place in a small pan and bring to the boil
3. When the rice comes to the boil turn down to a low temperature and allow to simmer
4. Add the meat to the pan and cook until evenly brown.
5. Add the spices and cook will constantly stirring for a further 3 minutes
6. Add the tomatoes and stir before allowing to gently simmer for 20 minutes
7. Add the kidney beans, chicken stock and ketchup and stir until desired consistency.
8. Serve with the rice,sour cream and grated cheese
