Duck Breast with Sweet Potato Mash

This week we wanted to give you something slightly more advanced to cook and really challenge your cooking skills now that we have taught you some of the basics. This is a delicious succulent duck dish with simple mashed sweet potatoes and a balsamic reduction. This is a step up but it is the perfect way to impress your friends or even a date with your new found kitchen skills.

Duck Breast With sweet potato mash and balsamic reduction
Wow your friends and loved ones with this Duck dish. Simple and easy to make, you can have restaurant quality food in your own home!
Duck Breast With sweet potato mash and balsamic reduction
1 Breast of duck
4 Sweet potatoes
1 Red onion
Balasmic vinegar
2 Tsp Sugar
2 Tsp Olive oil
salt and black pepper
Knob of butter
1.Peel the sweet potatoes and place in a pot of water and bring to a simmer.
2.Thinly slice the red onions and place in a pot to sweat them off over a medium heat stirring every couple of minutes
3.Trim any excess skin away from the duck breast. Score the skin in a criss cross shape but don't cut down in to the skin.
4. Place the duck skin side down in a pan and cook slowly for 6 or 7 minutes until it is crispy. When the duck skin is crispy flip it over and cook the duck on the other side for between 90 seconds and 2 minutes.
5.Strain the sweet potatoes and mash them with a little knob of butter and some salt and pepper.
6.Place a cup of balsamic vinegar and a couple of tsp of sugar in to a pan and reduce until syrup like sauce.
7.Place the duck on to the plate with the sweet potato and a drizzle of sauce.
Pesto
Our tip this week is for home made pesto which is easy to make and far better than the store bought versions and you can use on everything from simple grilled bread to a pasta dish.
How to make pesto:
Basil
Olive oil
Parmesan
Pine kernals
Garlic
Blitz everything together until smooth
