Everybody loves a good risotto but too often this classical Italian dish can end up stodgy and overcooked. This week we have gorgeous Mushroom risotto that is packed full of flavor and served up with juicer tender marinated pork chops!

Pork Chops with Risotto

Niall makes this awesome Risotto with some great pork chops on top!

1lb Arborio Rice
4 large flat mushrooms
2 Shallots
1/2 glass white wine
3 Cloves Garlic
1 lb spinach
1 Sprig Thyme
1 Sprig Rosemary
1 Pint Chicken stick
1/2 Cup of grated parmesan cheese
1 Small bag rocket
2 pork chops
1 Lemon
2 tsp olive oil

1.Sweat off the sliced shallots, chopped garlic, thyme leaves and mushrooms in the olive oil.
2.Add the rice and sweat off for a minute before adding the white wine.
3.Once the wine has steamed off start adding the stock ladel at a time until all the stock is gone and the rice is soft
4.Add the rocket, grated parmesan cheese, salt and pepper.
5.Finish with chopped parsley
6.Marinate the pork chops in some oil, rosemary and lemon zest, salt and pepper.
7.Char grill the pork chops on each side for 2 minutes until fully cooked.
8.Serve the pork chops and risotto piping hot.
