French Onion Soup

Ok no more messing around, we're back to regular Food Mob! And this week we are making an awesome French Onion soup which you can make in no time and has a handful of ingredients. Even Aaron liked it!

French Onion Soup
Don't be put off by this soup if you don't like onions because despite the name it really is one of the sweetest and most delicious and mouthwatering soups you have ever tasted. The key with this one is taking your time and having a lot of patience but take it from us this is well worth it cause it is just gorgeous.
6 Large White onions
2 Sprigs of Tyme
2 Shots of Brandy
1 Pint of Chicken Stock
1 Pint of beef stock
Salt
2 Tsp Olive oil
Chopped parsley
1 Baguette
1 Cup Grated Emmenthal cheese
A splash of Brandy
1.Peel and slice the the onions
2.Pick a large pot and start sweating the onions in a little oil over a very low heat.
3.Stir the onions occasionally and cook for 30 minutes until golden brown and caramalized
4.Add the picked thyme leaves
5.Add a splash of brandy or Cointreau
6.When the alcohol has burned off add the chicken and beef stock
7.Bring the soup the boil, season and that is it ready.
8.Slice your break in to thin slices
9.Cover each slice of bread with the grated cheese.
10.Place the bread and cheese on top of the sop and grill until golden brown
11.Serve immediately
Fruit Presentation
This little tip is a handy little way of brightening up a presentation table or breakfast plate. Do be careful with your hands though and make sure to use a sharp knife!
1.Make zigzag shapes around the fruit pressing through to the center of the fruit.
2.Pull the 2 halves apart.
3.Remove any seeds.
4.Serve or stuff as desired
