Mac and Cheese

This week we cook a delicious Mac and cheese and add a couple of secret ingredients to really take it to the next level. This really is one of the easiest dishes you will ever cook with the added bonus that its a big winner with the kids so make sure to get them involved if you have any!

Mac and Cheese

1 Lb elbow macaroni or similar
2 pints milk
1/2 cup butter
1/2 cup flour
2 Cloves garlic
2 cups grated sharp cheddar
1 bunch fresh basil
3 chicken breasts
1 cup dried breadcrumbs
3 Shallots
Salt and pepper
1.Cook the pasta
2.Remove the pasta from the water, strain and place in an overn dish
3.Thinly slice the shallots and garlic.
4.Sweat the thyme, garlic and shallots in a pot with a couple of tsp of oil.
5.Add the chopped chicken to the pot and swat off until the meat has been browned evenly.
6.Melt the butter and stir in the flour ro make a roux.
7.When the milk mixture comes to the boil add it to the roux and stir thoroughly until smooth. Stir in the cheese
8.Add the basil leaves and mix the pasta evenly with the sauce until evenly distributed.
9.Mix the breadcrumbs and the remainder of the cheese to make a topping.
10. Place the breadcrumbs on top of the pasta and bake in an oven at 200C/400F for about 20 minutes
11.Serve immediately
