Finally on FoodMob we decided it was time to take the plunge and go with a Vegetarian dish to keep all our veggie fans happy but meat fans shouldn't worry because we have added a little optional bacon to keep you all happy! You have to taste one of these stuffed potatoes to realize just how good they actually are and they work perfectly as either an appetizer or starter!

New potatoes stuffed with blue cheese, walnuts, spinach and pears.

Niall shows you how to make this amazing dish in Prager's kitchen!

1/2 Cup chopped walnuts

Half bag baby spinach

12 New potatoes (the larger ones)

3 Tsp Creme Fraiche (sour cream can be used as replacement)

Salt and pepper

6 Oz / 150g Blue Cheese

2 Pears

6 Slices Bacon (optional)

2 sprigs thyme

3 tsp olive oil

1.Place the new potatoes in to a roasting tray with a drizzle of oil, salt, pepper and some sprigs of thyme

2.Place the potatoes in to the oven at 200C or 400F and roast for about 40 minutes until golden brown and soft.

3.Peal and remove the core from the pears and chop in to even sized pieces. Place in a large bowl and add the crumbled blue cheese

4.Heat a small pan and cook the spinach with a little oil until it has wilted and add to the other ingredients

5.If you are making the non veggie version chop the bacon in to small pieces and cook until crispy

6.Mix all the ingredients together in a large bowl and add the creme fraiche to bring it all together.

7.Remove the potatoes from the oven, cut in half and scoop out the center and add that center to the veggie mixture.

8.Fill the potatoes with the mixture and return to the oven for 5 minutes until they are golden brown.

9.Serve immediately.
