I used to be one of the azzholes that would play music through the headset during my halo 2 sessions, i used to play "I Need A Hero" when picking up my friend with the flag...funny stuff.

I did all the Jedi knight games to Chemical brothers.
Undying to Genesis - A lamb lies down on broadway (might as well be the HP Lovecraft sound track)
Everything else I play Prodigy... I only change from prodigy on the rare occasion that it's not working for me. In fact I'm finding that Call of Cthulhu needs a different sound track and I might default back to A Lamb Lies Down on Broadway unless someone can suggest something better.

I've only ever done this while playing fighting games with my roommate, Alex, and we usually did the iTunes on shuffle. If we could do that nowadays, though, I think :
Daft Punk
Explosions in the Sky
Miles Davis
that's my homework music.

Holy shit. Exactly the same.....
Except I've never heard of Explosions in the sky, but I listen to Daft punk, Miles davis (and other jazz mainly bebop), and Alan Shavarsh Bardezbanian.

If I'm listening to music while playing games (especially WoW) then usually I put it on random, but here are bands I've liked and just started listening to in no particular order.
Tool (except this one is first because they are the best)
Cold War Kids
Thelonius Monk
Yes
Opeth
Sublime
Queens of the Stone Age
Broken Social Scene
Boy Hits Car
Antonio Vivaldi
That's just a sample, I'm sure there's lots more. I pretty much don't listen to music when I'm playing a game that relies somewhat on sound. Oh also with some of these bands, their older stuff is better.

When playing WoW for hours on end, I put in a MP3 DVD and use shuffle play...evident from my last.fm info.

Explosions in the Sky is amazing. They're instrumental rock/epic sounding music. They're ****ing awesome. I usually would say "instrumental rock? you mean some bullshit, jammy, 90% blues riffs 40 year olds that are too overindulgent? or some bullshit guys that gel their hair to their faces making sounds with machines they don't know how to use?"...but to this i say, no way. these guys are awesome. especially for 3am-6am pleasant stuff to listen to that can also pump you up at the right volume. so good.

Yeah man, Explosions in the Sky is ****ing awesome. You should check out Godspeed You! Black Emperor and From Monument to Masses, they're along the same vein.
Now for the forum topic.. I listen to Broken Social Scene when I play certain games.. But when I play Black it's hard not to pump that NWA.

Daft Punk
I have to try that.
I don't like listening to other music during games- not that I play all that much anyway. It takes me out of the experience too much and I find it distracting even in games like UT. To me, the in game music is there for a reason. I once listened to Cannibal Corpse while playing Serious Sam, but that really makes perfect sense.

Last year my room mate, a friend and I set up a game of Invasion in UT 2004 with epic movie soundtrack music in the background. It made the game feel much more intense when played to the Requiem for a Dream theme, in addition to Duel of Fates, some Hans Zimmer, and more.
