Does anyone know what resolutions the video options are? I think "small" was aprox 320x240 and "large" was 640x480. However, in iTunes "large" is 1024 wide. Um... ether my iTunes settings are off or I'm pulling the wrong feed.

Large is 640x480. However, your iTunes settings are probably for the video resolution to "Fit To Screen." To change that, while the video is playing, right click on the video and you should see option saying "Half Size," "Original Size," "Double Size," "Fit To Screen." Just click original size and it should revert back to 640x480. You can also hit Apple+1 (or Ctrl+1 in Windows) to get it to go original size. (Ctrl+0 for half size, Ctrl+2 for double size, Ctrl+3 for fit to screen.)

remember, these are all 16:9. As such:
HD: 1280x720 (720p)
"large": 640x360
"small": 230x180
