Any time I'm channel surfing and I stumble on Real Genius with Val Kilmer, I have to watch the whole thing. Even though I have it on DVD somewhere. I love that movie. Kilmer is a douche IRL, but I love this story.
Another is Can't Buy Me Love...Love the story. So real life lol
Other must watch:
Top Gun - Great shots, the soundtrack is great - the opening of Danger Zone is awesome
A Christmas Story - 'Tis the season!
Scarface - "Say hello to my little friend!"

Any kung fu movie.
Great answer !!!
If you have Tivo, do a martial arts/kung fu search, there are so many great, bad films on late at night.
Speaking of Kung Fu, netflix just set me, Skinny Tiger, Fatty Dragon. Yup, that's a real title.

Forrest Gump is probably my #1 movie I stop and watch if it's on... It's just so entertaining in so many parts that it never gets old.
Recently... I think Unbreakable made my list... I don't know why, but there's something about that movie that makes me stop and watch.
I always find myself watching The Prestige, too. I've seen this movie almost too many times...
There's some others that aren't entering my mind at the moment...

Oh god. I could watch Ryan Reynolds and Chris Marquette slapfight each other all day.
And Julie Hagherty saying, "what ham did you spank, not the one for dinner?"
Be yourself.. ... be yourself..... be yourself.
Anna Farris was sensational. I peed my pants when she kissed Darla, and then again towards the end when she said she liked girls and added, "Darrlaaaa". "Nice plane !!!!"
Paul Dano and Chris Marquette are in another movie together, that's two thirds of the tri-pod.

Seems like it's always comedies for me... if I haven't seen it in a while I will almost always stop for the next big hilarious scene or two.

I know that I stop for pretty much any Ron Perlman or Gary Oldman movie. See their names, and button clicking (with the exception of volume control) immediately ceases.
I also have a couple favorites that I would stop for that I've never really seen on tv. There's 'The City of Lost Children' (Ron Perlman flick) which I, thankfully, have on dvd. There's also one that I grew up with called 'Fire and Ice', which was made back in '83. I would most certainly stop for that one if I ever saw it on the air.

I generally only stop and watch movies I've never seen before on TV. If I've seen it and I notice it's on TV I usually end up renting or buying it.
The Ruins is on TV today, so I'm going to watch that. Never seen it, and would never pay for it based off what I know.

Die Hard 1,
Something about Bruce Willis telling the person he's hanging that his brother squeeled when he was breaking said brothers neck, never gets old.
Also, Dawn of the Dead(2004), oddly enough this movie is always on when I wake up in the middle of the night and I'm feeling really sick.
