I am currently using Ubunutu server, although I don't use vnc, I just ssh into and do my business. I also have webmin installed and I love it. You can do about anything to the box through a web browser, including shuting it down, adding users, setting up sql and about every other thing you can think of. :)

If ya have to ask, win2k3 server + Remote Desktop. Though try debian out for a server if you wanna use linux.

FreeNX (http://freenx.berlios.de/) is also great for remote desktops (secure and fast).

For an absolute base package.... Gentoo. I hate to suggest it but it really is the best way to go if you just want certain things.

As for VNC... just stick with SSH, chances are most of the stuff you'll be doing is in the CLi anyway.

Gentoo is an amazing distro for linux. However for a normal server for a less techy user the best would be Fedora, or CentOS. Both of which are maintained and widely used in the web nation. Gentoo is an amazing OS but extremely complex and if something breaks. Expect 1+ hour in fixing time.

any linux distro and ssh to the box to do everything. Or do the webmin as suggested above. That is a great piece of software. :)

Like Phool said, any distro would be suitable. Though if it was me, personally, I would use Redhat. In my opinion; Redhat/Fedora is best for servers.

I agree that any Linux distro would allow you to use ssh and/or vnc, I use webmin also. You don't need all three btw. I currently use Ubuntu 7.04 (feisty fawn). There is a known bug for the vnc included with it that will give you some trouble unless you ignore the build in the package manager and install from a tarball or cruise the user forums and find references to the bug and the fixes.

Btw if your going to be using vnc for Linux across any kind of unsecured computing environment then I suggest tunneling over ssh. Its not as hard or as troublesome as most people think.

edited to add:
I believe if you are looking for Linux distro thats a good starting point for the windows initiated Ubuntu gets my vote.
