Wolverine: Enemy of the state is a great choice.

While I ejoyed Planet Hulk a great deal, and World War Hulk to a lesser extent, I don't know if I would really call them the "definitive" Hulk stories because to me, the definitive stories should contain all of the elements that make a particular character great. I think those stories were very far away from your "textbook" Hulk story, which is part of the reason they were so great, but also why I would not call them "definitive." Unless by "definitive" the OP just meant "Best," in that case, you're pretty much spot on.
