Here's a real easy trick that will get you a beer guaranteed. After a little while, theres bound to be someone who brags about how fast they can down a beer, this is a great time to set them up for the race. After the race, you assuage their ego, i usually use the line "well, how about a rematch, no tricks this time, we'll keep it simple. Grab us each a drink and we'll have a good old fashioned race. We can keep it real friendly, how about $1 says i can drink my pint faster than you can yours." Or something of the such that fits your style. Once he comes back with the two drinks (its important that he buys them, perhaps instead of paying from the race) put your dollar on the table or give it to a third party. Dont actually race him, let him down his drink. "You win, as soon as you started i knew i had no chance" or some patter of that type. Yes, you pay him a dollar for the bet, but you now have a drink you only spent $1 for. Enjoy.
