This isn't a very complicated question really, but one that I could use some help with. I am not sure what the actual power usage would be for my system would be, so I'm not sure what size PSU to buy. Here are the spec of my system:

AMD Phenom 9950 Black Edition
4gb ddr3 ram
1 500gb WD hdd
ATi Radeon 4870 1gb
and just your basic lite-on dvd-rw
couple 80mm fans in there too

When looking at all of the products I bought, the highest rating I saw needed was on the GPU of course, and it said anything 500+ that has the correct connections should be fine. Seems a little low to me...what do I need???

500+ is likely quite enough. I'd go with a good 600-650+ just to be sure. Look for a 80%+ efficient one, no sense in wasting more power to heat than you have to due to conversion losses.
Just be sure to make sure the PSU has the right number of GPU power pins to feed the video card. (not sure if that's a 6 pin or 8 pin card)
