Im going to suggest a pumpkin roll. They are really good and I heard they are hard to make so it should be a good episode! :) LOL

Pumpkin pie is a great idea! I've been trying to find recipes for it where you cut up a real pumpkin instead of cheaply getting that canned custard stuff you buy at the store, but I'm having difficulty finding one. Ctrl+Alt+Chicken can save me the trouble.

Ctrl+Alt+Chicken can save me the trouble.I am sure they are out there somewhere, but you are going to have a hard time finding one. There is a reason that the pumpkin custard in a can is used - because the amount of time it takes to cook a pumpkin to that consistency takes for ever, and the type of pumpkins that use are not available everywhere. Its not your typical carved pumpkin pumpkin, it is often a mixture of winter squashes (butternut squash for one) that is sweeter than most pumpkins common at this time of year.

Good mini-bite recipe - Great appetizer. Can serve with apples or even crackers, but the best is serving with ginger snaps. Very yum! Makes about 4 cups.

1 (8 ounce) package cream cheese, softened
2 cups confectioners' sugar
1 (15 ounce) can solid pack pumpkin
1 tablespoon ground cinnamon
1 tablespoon pumpkin pie spice
1 teaspoon frozen orange juice concentrate

In a medium bowl, blend cream cheese and confectioners' sugar until smooth. Gradually mix in the pumpkin. Stir in the cinnamon, pumpkin pie spice, and orange juice until smooth and well blended. Chill until serving.

There are two kinds of pumpkin you can pick up from the store... there's pumpkin pie filling (the premade uncooked custard) and plain old solid-pack pumpkin.

If your recipe asks you to add milk and eggs to your canned pumpkin, then you've got a good recipe. Just peel, cut into chunks, roast until tender, and puree a pumpkin and substitute a measured amount of that puree in place of the canned pumpkin. If it asks for a 16oz can, you need two cups.

Here's a link to a recipe that would easily be converted. It calls for a 15oz can, but an extra ounce of pumpkin won't hurt... just stop pouring when the pie shell is full. The extra filling can be put into a ramekin and cooked like custard, or discarded.

Nat, since those things are staples around here (I am always deciding in the middle of the night to cook things and shoce them off onto people the next day), even the gingersnaps, I made this. Yum! Only I added a pinch of ginger and ground cloves, and a tablespoon of dark brown sugar, and that kicked it up a bit. :) All in all, YUM!

A recipe for Roasted Pumkin Seeds would be great on the show. I have heard how great these are but have never tried any.

Throw seeds in a pan. Three cups of water and quarter to half a cup of salt, epending on how salty. Mix it together, let them soak over night. Drain the water, roast at 400 for about 15-20 minutes, a little longer if you like them crunchier, turning them every five or so. Easy.

They can be eaten shells and all, as I do, or just the seeds.

Blood red jello!

One part each: blueberry, pineapple, strawberry. Prepare in the normal jello fashion. Freeze. (For some reason, it turns blood red-brown after freezing).

Also, doesn't taste half bad.
