Does it being my baby girl's first 4th of July count? We haven't decided yet what we're doing, just playing it by ear. We could make Hamburger Helper and it will be a great day.

I am over in Europe so it is not a big deal here at all, nobody celebrates it which is a big shame because some good food and a party is always a good thing in my opinion no matter what!
All I had today was some Malasyian chicken and rice which doesn't really tie in with the theme well!
Interested to hear what all of you guys cooked up though?
Cheers

Seared fennel seed crusted tuna steaks, served over couscous with a garlic lemon aoili. Desert was angel cake with honey vanilla ice-cream and frozen blueberries.
Just like America, my meal was a cultural melting pot.

Sure Aria, a Baby's' first is always the best.
Not there first smelly poop, as I have heard.
Not the first time I held my last niece. My Brother handed her to me and she tooted so loud she vibrated. My Brother turns around with a look like, "How dare you Fart when you first hold my Child!" I had to tell him it wasn't me. But, I did only cause he would think it was funny too. Otherwise, I would take the blame for my, to be, God Daughter.
But for Holidays, their first is always the best.

I had to post separably for totally different generations. Some of you guys had stuff I would love to do myself.
With the old man getting a new diet for his life. (With Congressional Heart Failure) I was happy to be his host this year. But, I had to do the best I can. I made a pasta and Turkey meatball dish, with spinach and fresh tomatoes, and fresh garlic and onions. OK, I forgot a few steps and seasonings I intended with the Turkey Meatballs.
I was up all night thinking about it. Lucky, I remembered it had to be hot. The textures and all, he LOVED the whole GRAIN pasta part. (Not whole wheat. had it in the past, no go) He dropped on the last of the meatballs. They had the Spinach, onion and supposed to be mix. Maybe not used to the more dense texture, maybe I did it wrong.
(But he did love a mid day Burger I made for him from beef. With the seasonings I intended and he loved. Maybe I slipped up.)
No salt and no sugar. That is the deal.
Could be a transition, could be I need to adapt fast as a cook for the guy 3 times a week.
Suggestions? Mostly in the remembering part.
Plus, he has a test in two days from, no where near the top, to bottom. Yeah. And a healthy appetite and full fridge. Not liking the 24 hour Nazi post at all.

I cooked everything under the sun this weekend with the folks, and I had a great time. I cooked 16 hamburgers, around 30 hot dogs, and 4 ribeye steaks. I used my trusty old Weber circular charcoal grill with Kingsford charcoal. I would rather grill outside than cook inside any day. Also, I don't use lighter fluid; I use a charcoal chimney to get the fire going. One thing I am curious about is how does Chef Niall create an even heat in the grill. One side of my grill is always hotter than the other side, and thus, I have to move stuff around.
We ate the ribeye steaks tonight for dinner along with Uncle Ben's rice, blueberries, and orange juice....... Why the orange juice? I have no idea. :D :D I think the parents were just trying to get rid of it. We also ate some of the hamburgers and hot dogs yesterday and Friday; we ate other things as well (it wasn't a complete red meat fest).
The only problem with grilling so much stuff at one time is the uneaten hamburgers eventually turn into hockey pucks. I guess the fridge does something to them.

Most everything was prepared ahead of time. Nothing fancy but we had:
Appetizers: banana dip with chips
Salads: potato salad, green salad,,mixed vegetable salad, lentil-noodle salad
Meat dishes: turkey tacos and, pan fried chicken
Desserts: ice cream, and half-n-half milk with sugar jello (aka panna cotta)

We ended up grilling massive hamburgers with cheddar, with sweet potato fries and this chipotle-ranch sauce Cody made. We forgot to throw some bacon on the grill, so alas, no bacon.
And then we watched massively illegal fireworks display. :)

I had plenty of plans but I sprained my ankle on Thursday. I was able to direct the wife through some of the cooking but that gets old for her really fast. However, she was really pleased with the batch of rosemary potato chips she made following my directions. She could have chopped up the rosemary a little smaller but she did a pretty good job.
