How did they do it on the old TSS episodes and other shows where you can see what someone is doing on the screen without just zooming in on it. Like in the episode with Bert Monroy how we couild see what he was doing on his pen tablet withougt seeing his arm over it...do you understand what I mean? How did they do that?

I would say that they connected another monitor to his tablet you have the option of mirroring your monitor on two monitors.

There is a VGA connector on laptops, I assume on Tablets as well, basically it works like a dual output video card on a desktop computer.

Alternatively, they have a piece of software that just records what is being shown on the monitor and saving it as a video file. They then just combine the two videos in editing.

Dual head video cards are another option - and pretty cheap to come by. Even a card with a video out port (looks like an RCA plug) to hook directly into a video recording fed works well as well (but at reduced resolution).
