1-1/2 lbs ground beef
1 clove garlic, minced
2 eggs
1 teaspoon salt
1 cup dry bread crumbs
1/4 teaspoon oregano
1/2 cup Parmesan cheese
1/4 teaspoon pepper
1/4 cup snipped parsley
2 tablespoons oil

Mix together all ingredients except oil. Form mixture into balls. Heat oil and brown meatballs in oil. Place meatballs into sauce and simmer uncovered for 20 minutes.

I might try this, After Crab cakes. I tried the stew and now the meatballs are going in my mouth

Advance Meatballs.

1/2 pound ground pork
2/3 pound ground lamb
1/2 pound ground round
5-8 ounces frozen spinach (less if you dislike spinach)
2/3 cup finely grated Parmesan (fresh is best)
2 eggs 1 Yolk 1 hole egg
2-4 Basil leaves (Chiffonade)
1 1/2 teaspoons dried parsley (I like dried for this better)
1 teaspoon garlic powder or 2 fresh clove crushed and chopped
1 teaspoon kosher/sea salt
1/2 teaspoon red pepper flakes (heat in pan for 2 mins to release oils)
1 cup bread crumbs
Black pepper to taste.
1/2 teaspoon of oilive oil

In Mixing bowl, mix all ingredients (using your hands) together. Saving 1/4 cup of bread crumbs. In a seperate dish put 1/4 cup of breadcrumbs roll out 2 ounce meatballs and roll in breadcrumbs.

Bake in 400 degrees F oven. For aprox 20 minutes or untill internal temp is 165 degrees.

Serve over pasta and with Marinara sauce.

I got sidetracked. As I'm having sushi right now, going out tomorrow, a poetry slam Tuesday, it will be Wednesday before I can make meatballs. but they sound good! Both of them!

On Tuesday nights I usually go to this British pub to a poetry slam. I am a regular judge who gets to break people's spirits with low scores. :) j/k, I'm a good judge. Slam poetry is different from spoken word in that it's usually more rythmic. A lot of it could be rapped. To read on paper, you'd lose a lot of it. TI see it performed is seein art in motion and sound.
