Here are some of my ideas:

-Basics of the Arduino or Basic stamp for puting together quick projects.
-Modding a linksys router, the wrt54g(s/l), (software and/or hardware)... wardriving maybe?
-Getting started with linux (its not a scary thing)

-AVR stuff{
LCD screen.
GPS.
Driving more LEDs than Pins./led matrix.
Analogue input/output (temp, light, pressure)
Driving high voltage components with a a microcontoller
