I'll start things off:

Are all downloads from iTunes now in the higher res h.264 format?

Any free programs that will allow me to encode to that format? I have one but it does only mp4 at the old res.

Or you can use x264 with mencoder. It's complicated as hell but it's free.

I'm using Mainconcepts H.264 Encoder Plugin for the Mainconcept Mpeg Encoding Software and it's pretty fast and very good. You may want to check out the x264 project though.

Will I notice a difference when watching videos on my ipod though? If not, then I guess there's no point in wasting time converting videos.

No, i dont think youll notice a difference on current gen ipods. However maybe the file size is smaller? Not sure. Try the same clip in both formats and see for yourself.

h.264 is generally a smaller file size, but not enough to make any difference on a video iPod. And I doubt it will look much/any better on your iPod in a different format. It should look better on your computer and be smaller, but it won't make a difference when it comes to your iPod.
