Put simply Xeon was designed for servers and workstations, not desktop computers. You could use one, but the i7 for example has features that would only benefit you if you were gaming or some form of media, vice versa.

A current Xeon is pretty much the same as a current Core i7, except for the fact that Core i is only single socket.

If you want 2 or more physical CPUs you need an Intel Xeon or an AMD Opteron.

Core i is generally clocked higher than Xeon, but having more processors means more cores, so Xeon is preferable if you are using a lot of processing threads, in high load applications, video encoding, etc.

For Windows users, you need the business or ultimate editions to be able to actually use dual socket on a desktop/workstation.

It's also hard to find dual socket motherboards for gaming (that allow multiple GPUs). The current high end motherboard is the EVGA Classified SR-2, which takes dual Xeons and supports quad SLI, but is ridiculously expensive ($600 for the motherboard alone) and will not fit in most cases.

With the ridiculous prices of the high end i7s though, it may actually be less expensive to get 2 decent Xeons than 1 overpriced i7. I'm using two E5620 Xeons, which cost about £300 each, while a single i7 980X cost about £1000 at the time.
