i wanna try to do this week's monday challenge, but the only problem is that i have a Canon 60D DSLR camera. Since it doesn't have continuous focus, is it possible to move the camera backwards, zoom in on the character, AND keep him/her in focus at the same time?

Sure but it'll take some practice. The cheapest DIY way is to get a couple zip ties with long tails on them and cinch them around the zoom and focus. This'll take your hands off the lens giving you more room to maneuver and a smoother transition. Get your starting point (A), get your ending point (B), and rehearse the camera move.

another way is to buy a cheap jar opener. THey are cheap, under 3.00. and they strap around your lens nicely.

In regards to the jar opener, specifically it's the Trudeau one. Cheap enough to have around, although it doesn't always fit the lenses I use.
