Ditto ... I'll take the steak out, cover it with foil to rest, then dump in some butter and mushrooms and a little water (to help loosen the fondlings), or a sliced onion and beer (use a domestic American beer - they aren't good for anyt ... never mind) and cook the onions and beer down. Onions or mushrooms aren't really a sauce, they are a side dish

Thats what you get for using US domestic beer I guess

Technically, the stuff stuck to the bottom of the pan is called "fond", not fondlings, but why ruin a good story

I use charcoal. And no, I don't use lighter fluid or any starting fluid. Instead I use a charcoal chimney.

You just put the charcoal in up to the top. Use newspaper (or something) to light it from underneath. Within about IDK - 30 minutes the charcoal in the chimney will be seriously hot (and on fire). (I can tell when it is done because there are flames coming out of the top of the chimney.)

After I wait for the charcoal to fully ignite. I "pour" the hot charcoal it in my standard Weber black grill, and I am ready to cook some steak. I always have a seriously hot fire.

Default What a Pompous Guy

Wow, 2 minutes into this episode and Chef Niall pompous, arrogance is making want to turn him off. I was willing to give this show a second chance. But wow is he annoying, his views on food wrong, and god is he un-entertaining.

Please Revision3 cancel him fast!

Haters gonna hate. Anyways...

You do not know how hungry that just made me. It looked so damn good, and I don't usually eat steak that rare. The wedges looked amazing, the salad looked simple, yet still very appetizing! Now I really want to eat steak tonight!

Wow. This show is great. I can definitely see it evolving in to a huge force on Rev3. Chef Niall is the Alton Brown of Rev3 and the internet!

I see the Alton Brown thing but I am reluctant to make that reference. If Alton Brown had jumped on the internet thing a few years back, he would be three times more famous now. But he didn't and that left room for "Food Mob", thankfully.

Far as the person going from thread to thread hating this show. If you don't like it don't watch it, stop wasting your time. Niall is anything but pompous. It isn't like he covered the steaks in a replica of Lincolns' cabin with carrots cut into "matchsticks". That would be pompous. Two shows in, he only cooks with ingredients that are easy and accessible.

Far as this episode, right up my alley. I bought a grill pan and loved it. Seemed like the food cooked itself. Recently, it seems like I can't cook anything with it anymore. I think I got lazy about it or something. I haven't cooked a steak in it, for that reason, in months. I will follow this show and do it again. I am sure it will be good. Like I said, most bullet points in this process is where I was lazy. High heat and such. The Potato wedges I WILL make. I used to do that all the time but my weight and the throwing away of food stopped me. But, I will spice them up and do it again soon. The salad on the side, nice. I do prefer baby spinach, as mentioned, with just salt, pepper, and extra virgin olive oil. Easy and tasty.

Good episode good show.
