I've been using a cheap $15 caddy from eBay for the past 4 months on my mid-2009 15" MacBook Pro. In the caddy, I'm using my Corsair V64 64GB SSD, and I'm still using my 500GB 7200RPM hard drive (just like Patrick mentioned!). Speeds are incredibly fast, and doing this was the best computing decision I've ever made. Everyone should get a SSD! Best $150~ I've ever spent.

Also, I have Mac OS X -and- Windows 7 on that single 64GB SSD, and there's still over 20GB left. All of my applications are on the SSD, and my games and media/documents on the 500GB hard drive. Best combo ever.

These caddy's should work on regular laptops too, as they use similar sized optical drives.

It takes about 15 seconds for Windows 7 to bootup, and Mac OS X takes less than 10. My MBP has a 2.66GHz Core 2 Duo and 8GB RAM (upgrade from the stock 4GB).

In response to the SSD question. I put a 40GB SSD in my Macbook Pro (Mercury SSD, $100 from OtherWorldComputing.com) and installed all the OS on it including apps etc. I put my 320 GB HD in place of the optical drive (using the DualDrive from PowerBookMedic.com, which was the cheapest option I found, about $60) to store all my media and documents.
My MBP is from late 2007 (with 4 GB of RAM) so it's pretty old, but this update makes it feel like a new machine. It's so fast. No more spinning beach balls!
I agree with besweet...this is a brilliant way to speed up your computer.
There are videos on the websites above about how to do the installs.

I just upgraded my stock 160GB 5400RPM Macbook (Macbook 4,1 model - early 2008) to a Seagate Momentus XT Hybrid drive. ($89 @ Fry's)

Its a 500GB HDD / 4GB SSD / 32MB Cache / 7200RPM drive.

Its not the dual drive setup, but the difference in startup speed is amazing. The hardware recognises the files being accessed most frequently (OS and apps mainly) and places them into the SSD portion for READ access. Thats the big point ... you cant write anything there yourself, the harddrive manages the access.

Time will tell just how successful this is, but its pretty impressive so far.
