Default Computer build recommendations?

I will be building a new computer in the coming months and I am starting to price things out. I am set on getting the i7 3770K, with the current motherboard choice a ASRock Z77 Extreme4.

Now, after case, fans, hard drive(no ssd), optical, and accessories, I'm at $255 out of a $1000 budget. The the i7 will be $290 - $360 from what I see, so well say $330 unless I can find it on sale somewhere. My question I pose to this forum is, what ram and gpu should I get? I want two 8gb sticks so I can later max out the mobo to 32gb with two more 8gb sticks. My ultimate goal with gpu's is a triple monitor set up with 2 20'' dell ultrasharps and 1 30'' ultrasharp with a combined resolution of 4960x1600. So SLI will be a future upgrade as I only have one 20in Ultrasharp. What GPU can I get now, that paired with a twin, will be a good buy for the money vs power.

I am building this computer to be my primary work station for the next 5+ years, with the main goal of filling any deficiencies in the original build with upgrades over the next 2-3 years. For instance, one gpu now with the intent of using it to go dual SLI in the future. I don't want to buy any parts that I will have to throw out to reach my final goal, so two 8gb sticks of ram with room for two more instead of four 4gb sticks now. This computer will do all manner of things like pod-casting, video encoding, games (mid range and oldies, none of the latest and greatest games that bring even the most top of the line computers to its knees), and some basic office work. My motherboard pick is not set in stone, it simply is the one that seems to meet my upgrade requirements and has enough expansion slots after two dual slot GPU's are installed. I prefer nVidia over ATI for some odd reason, but if the argument can be made for cost and power then I am willing to yield to ATI. A small request I have is that if at all possible, the ram be purchasable at directron.com as I live near there warehouse and can buy without paying for shipping. I will most likely get the CPU from microcenter or if it is a really good price somewhere else, and some parts for the computer build will have to be bought out side of directron. (The motherboard, black case fan mounts, and most likely GPU to get the best price.) The $1000 budget is a target, $100 over is my comfort limit. I have a ATI 6770 now in my current computer, so if its better to wait(as it always is) I could get a SSD instead of the GPU. But, I would still like a recommendation. I'm currently paying $35 for a 600 watt SLI ready power supply, but if the GPU recommendation requires it, I will probably have to go higher and it will cost more.

I can link all the parts I am looking to buy now, and I am open to polite criticism on my build preferences. Again, it will probably be 3 months before I start buying parts to assemble the computer.
